With as strange as winter has been this year, warm-cold, warm-cold, all I can think about is what kind of  soup I can make next, with that said, I found a wonderful Vegetable soup on Pict Sweet website: www.pictsweet.com   called Veggie Soup to Die For. Their recipes calls for the following: 
  • 1 pound ground beef 
  • 3 1/2 cups Pict sweet frozen mixed vegetables
  • 1 (1 oz.) envelope of onion soup mix 
  • 1 (46 oz.) can V-8 juice (spicy version is good) 
  • Salt and Pepper to taste 
  • 1 cup grated cheddar cheese; optional use as topping on soup when serving.
  • I added the following (in hopes of coming close to my Mom's recipe for it):
  • 1 (16 oz.) bag of slaw mix (cabbage & carrots only)
  • 1 (14.5 oz.)can of veggie broth
  • 1 medium onion, chopped
  • Kosher salt, to taste 
  • Ground black pepper, to taste
  • A dash or two of Frank's hot sauce

Cook ground beef in a skillet until meat is browned. Drain. In a Dutch oven, combine mixed vegetables, onion soup mix, V-8 juice and cooked meat. Bring to a boil, reduce heat and simmer for 20 minutes. Salt and pepper to taste. Serve with grated cheddar cheese on top.
This veggie soup comes very very close to what my Mom's version was, which she adapted, I think, from Scared Heart Hospital recipe which came from TV talk show but I'm not sure which one it might have been.
