My Mom's Bruschetta

Ingredients:
  • 1 large onion, diced
  • 2 (28 oz.) cans Dei Fratelli Petite Diced Tomatoes
  • 3 Fresh tomatoes, diced
  • 1 - 2 tbsp Garlic EVOO -- used The Olive Branch version
  • 1 - 2 tsp Sweet basil, dry. If you use fresh, adjust amount accordingly.
  • 1 - 2 tsp Parsley, dry. If you use fresh, adjust amount accordingly.
  • Kosher Salt, to taste (table salt is also fine to use.)
  • Ground Black Pepper, to taste.
  • 2 Cloves garlic, minced
  • 1 - 2 tsp Tuscany Blend Bread Dipping Seasoning (From The Olive Branch) or store brand that you prefer will work fine.
  • 1 - 2 tsp Garlic Garlic from Tastefully Simple
  • sliced French or Italian bread. * Look for it already sliced bread in your grocery's bakery area.

Directions:

Combine and mix all ingredients together in a large bowl. Cover and place in refrigerator. Chill up to one hour before serving.  

For the bread:
French or Italian Bread
Salt & Pepper

Parmesan Cheese
Directions:

Slice, if not already done, the bread into even slices. Brush with Garlic EVOO, sprinkle with Parmesan cheese, salt and pepper and then place on cookie sheet. Broil on low 2-3 minutes or until crisp. Top with Bruschetta and enjoy!
